Instructions
- Construct and Chill the Crust: In a medium bowl, combine graham cracker crumbs, brown sugar, and melted butter; mix until moistened. Pour into a 9-inch springform pan and press down. Chill for at least 15 minutes.
- Whip the Velvet Filling Layers: In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Add lemon juice and sour cream, mix until silky. In a separate bowl, whip heavy cream until stiff peaks form.
- Fold, Assemble, and Rest: Fold whipped cream into the cream cheese mixture gently. Pour onto the chilled crust and smooth the top. Cover with plastic wrap and refrigerate for 4 to 6 hours or overnight.
- Garnish and Serve: Release the springform pan and add toppings. To slice perfectly, use a knife dipped in hot water, wiping between cuts.
