- 100 grams Domino® Golden Sugar
- 4 grams egg white powder (optional)
- 100 grams egg whites
- 105 grams almond flour
- 187 grams Domino® Powdered Sugar
- 1 tbsp meringue powder
- 4 tbsp water
- 2 drops black gel food coloring
- 1 drop yellow gel food coloring
- 63 grams all-purpose flour
- 113 grams unsalted butter
- 50 grams Domino® Golden Sugar
- 156 grams Domino® Powdered Sugar
- 1 tsp vanilla extract
- 1/8 tsp almond extract
- 1/2 tbsp milk or heavy cream
- 50 grams desiccated coconut (shredded)
Instructions
- Prepare all of the ingredients.
- Line two baking sheets with parchment paper or a silicone mat.
- Sift the powdered sugar and almond flour together.
- Preheat the oven to 300°F (or 270°F for convection) for 60 to 90 minutes.
- Place a heatproof bowl over a pan of simmering water; add sugar and egg white powder; whisk until dissolved.
- Transfer the mixture to a stand mixer bowl and whip until stiff peaks form, about 13 to 15 minutes.
- Fold the sifted mixture and food coloring into the meringue.
- Pipe the batter onto the prepared sheets and bang the trays to remove air bubbles.
- Allow the macarons to rest for 30 minutes to 1 hour.
- Bake one tray at a time for about 15 to 20 minutes.
- Cool before decorating.
Notes
Ensure all ingredients are at room temperature before starting and do not skip the resting time for best results.
