Ingredients

  • 1 large egg
  • 2 tablespoons red food coloring
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon white vinegar
  • 16 ounces full-fat cream cheese
  • 1 cup granulated sugar
  • ½ cup sour cream
  • ½ cup heavy cream
  • 2 large eggs
  • 1 cup fresh strawberries, pureed
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh strawberries, sliced
  • ¼ cup granulated sugar
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat the oven to 175°C (350°F) and prepare the springform pan.
  2. Sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Whisk vegetable oil, buttermilk, egg, red food coloring, vanilla extract, and vinegar in a separate bowl.
  4. Combine wet and dry ingredients, pour into the pan, and bake for 25–30 minutes.
  5. Cool the cake completely in the pan.
  6. Lower the oven temperature to 160°C (325°F).
  7. Beat cream cheese until smooth, then add sugar, sour cream, and heavy cream.
  8. Incorporate eggs one at a time, then mix in vanilla and strawberry puree.
  9. Pour cheesecake batter onto the cooled cake base and bake for 60–70 minutes.
  10. Cool the cheesecake in the oven for 1 hour, then chill for at least 4 hours.
  11. Macerate strawberries with sugar and lemon juice shortly before serving.
  12. Unmold the cheesecake and top with macerated strawberries before slicing.

Ensure all dairy and eggs are at room temperature to avoid cracks in the cheesecake.
