Description

A filling and delightful dish that sneaks in protein without sacrificing taste, perfect for quick weeknight meals.


Ingredients

  • 8 oz pasta
  • 1 lb ground turkey or beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, cook ground turkey or beef over medium heat until browned. Drain any excess fat.
  3. Stir in taco seasoning and cook for 1-2 minutes.
  4. Add black beans, corn, diced tomatoes, and chicken broth to the skillet.
  5. Bring to a simmer and let cook for about 5 minutes.
  6. Stir in the cooked pasta and cheese. Mix until cheese is melted.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped cilantro.

Notes

Consider adding sautéed onions or bell peppers for extra flavor. For spice, top with jalapeños.
