- 8 oz pasta
- 1 lb ground turkey or beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 2 cups chicken broth
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, cook ground turkey or beef over medium heat until browned. Drain any excess fat.
- Stir in taco seasoning and cook for 1-2 minutes.
- Add black beans, corn, diced tomatoes, and chicken broth to the skillet.
- Bring to a simmer and let cook for about 5 minutes.
- Stir in the cooked pasta and cheese. Mix until cheese is melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped cilantro.
Notes
Consider adding sautéed onions or bell peppers for extra flavor. For spice, top with jalapeños.
