Ingredients

  • 2 cups Graham Cracker Crumbs
  • ¼ cup Granulated Sugar
  • ½ cup Unsalted Butter (Melted)
  • 16 oz (2 blocks) Cream Cheese
  • ¾ cup Granulated Sugar
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • ½ cup Sour Cream
  • 1 cup Whole Milk
  • ¼ cup Granulated Sugar
  • 1 tablespoon Cornstarch
  • 2 Egg Yolks
  • 1 teaspoon Vanilla Extract
  • ½ cup Heavy Cream
  • 4 oz Semi-Sweet Chocolate

Instructions

  1. Preheat your conventional oven to 325°F (163°C).
  2. In a medium bowl, stir together the graham cracker crumbs, granulated sugar, and melted butter until the mixture holds together.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake at 325°F for 10 minutes, then cool completely.
  5. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
  6. Add the eggs one at a time, mixing gently.
  7. Stir in the vanilla extract and sour cream until smooth.
  8. Pour the batter over the cooled crust and smooth the top.
  9. Bake at 325°F for 45 minutes.
  10. Remove from the oven and cool in the oven for 10 minutes.
  11. In a medium saucepan, combine milk and sugar, heat until warm.
  12. Whisk the egg yolks and cornstarch together until smooth.
  13. Temper the egg yolks by slowly adding warm milk.
  14. Return the mixture to the saucepan and cook until thickened.
  15. Stir in the vanilla extract and cool before spreading over the cheesecake.
  16. Pour hot cream over chopped chocolate and whisk until smooth.
  17. Pour the ganache over the custard layer.
  18. Chill the cheesecake for at least 4 hours before serving.

Notes

For best results, allow to chill overnight for enhanced flavor and texture.
