- 1 cup Digestive biscuits, crushed
- 1/2 cup Unsalted butter, melted
- 1 cup Coconut cream
- 1/2 cup Icing sugar, sifted
- 1 teaspoon Vanilla extract
- 1 teaspoon Gelatine powder
- 2 tablespoons Water
- 2 cups Mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons Honey or maple syrup (optional)
- Fresh mint leaves (for garnish)
- Additional berries (for garnish)
Instructions
- Start by preparing the base. Combine the crushed Digestive biscuits and melted butter in a bowl. Mix well until the crumbs are coated.
- Press the mixture firmly into the bottom of a lined baking dish to form an even base.
- In a separate bowl, mix the coconut cream, icing sugar, and vanilla extract until smooth.
- Dissolve the gelatine powder in water and let it sit for a few minutes. Then, heat it gently until melted, and stir it into the coconut cream mixture.
- Fold in the mixed berries gently, and pour the mixture over the biscuit base.
- Refrigerate the slice for at least 240 minutes or until set.
- Once set, garnish with additional berries and fresh mint leaves before serving.
Notes
This dessert is best served chilled. It can be made ahead of time and stored in an airtight container in the refrigerator for up to 3-4 days.
