Description

A rich and moist chocolate cake with tender pears baked into the center, combining deep chocolate flavor and natural sweetness.


Ingredients

  • 3 medium ripe but firm pears
  • 1 tablespoon lemon juice
  • 1 tablespoon brown sugar
  • 1 tablespoon butter, for greasing the pan
  • 150 g all-purpose flour
  • 40 g unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 150 g granulated sugar
  • 100 g unsalted butter
  • 100 g dark chocolate, chopped
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120 ml milk
  • Powdered sugar (optional, for serving)
  • Whipped cream (optional, for serving)
  • Vanilla ice cream (optional, for serving)
  • Chocolate sauce (optional, for serving)
  • Fresh pear slices (optional, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter and line the bottom with parchment paper.
  3. Wash and peel the pears, core them, and slice them into thin, even slices.
  4. Toss the pear slices with lemon juice and brown sugar.
  5. Arrange the slices in overlapping circles in the bottom of the prepared cake pan.
  6. Melt butter and dark chocolate together and allow to cool slightly.
  7. Whisk together flour, cocoa powder, baking powder, and salt in a bowl.
  8. In another bowl, whisk the eggs, sugar, and vanilla together.
  9. Add the melted chocolate and butter mixture into the egg mixture.
  10. Gradually add the dry ingredients and milk, mixing just until smooth.
  11. Pour the chocolate batter over the arranged pears.
  12. Bake for 40–50 minutes, checking for a toothpick to come out with a few moist crumbs.
  13. Cool the cake for 15–20 minutes before inverting onto a serving plate.
  14. Dust with powdered sugar if desired and slice to serve.

Notes

This cake can be made ahead of time and is best enjoyed within a few days. It can also be frozen for up to 2 months.
