Description
A delightful homemade version of the classic Eskimo Pie, perfect for summer treats.
Ingredients

- 2 cups vanilla ice cream
- 1 cup semi-sweet chocolate chips
- 2 tablespoons coconut oil
- 3/4 cup crushed nuts (optional)
- 1/2 cup milk
Instructions
- Layer the bottom of a popsicle mold with vanilla ice cream.
- Freeze for 1 hour or until firm.
- Combine chocolate chips and coconut oil in a bowl.
- Melt in the microwave until smooth, stirring every 30 seconds.
- Pour the melted chocolate over the frozen ice cream layer.
- Add crushed nuts on top if desired.
- Insert popsicle sticks and freeze for at least 4 hours.
- Remove from mold and enjoy!
Notes
For a creamier texture, use full-fat ice cream. You can also experiment with different flavors of ice cream.
