Description

A delightful dessert combining rich flavors of white chocolate and cheesecake, perfect for any occasion.

Ingredients

Scale
  • 450 g cream cheese, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups sugar
  • 4 large egg whites
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 150 g white chocolate, melted and cooled
  • 1 cup evaporated milk
  • 1 cup brown sugar
  • 3 egg yolks
  • 1/2 cup butter
  • 1 1/2 cups shredded coconut
  • 1 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1 cup butter
  • 3 cups powdered sugar
  • 23 tablespoons milk

Instructions

  1. Preheat your oven to 160°C (325°F). In a mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, then mix in the sour cream and vanilla extract. Pour this mixture into a lined cake pan and bake for 40-45 minutes. Let it cool completely, and then refrigerate until firm.
  2. Increase the oven temperature to 180°C (350°F). In one bowl, mix the flour, baking powder, and salt. In another bowl, beat the butter and sugar until light and fluffy. Add the egg whites, followed by the milk, vanilla, and melted white chocolate. Combine this with the dry ingredients. Divide the batter into prepared pans and bake for 25-30 minutes. Allow to cool completely.
  3. Combine the evaporated milk, brown sugar, egg yolks, and butter in a saucepan. Cook over medium heat while stirring constantly until the mixture thickens. Remove from heat and stir in the coconut, pecans, and vanilla. Let it cool.
  4. Start by placing one cake layer on a serving plate. Spread the cheesecake layer on top and then add the second cake layer.
  5. Spread the coconut-pecan mixture over the top of the cake. You can frost the sides if you wish.
  6. Refrigerate the cake for 1-2 hours before slicing to get clean layers.

Notes

For best results, use room temperature ingredients and do not overmix the batter.
