- 1/4 cup milk
- 2 cups heavy cream, divided
- 1 cup raspberry puree
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries (for garnish)
- 1 chocolate cake (for base)
Instructions
- Melt the white chocolate with milk in a double boiler, stirring until it becomes smooth.
- Allow it to cool slightly.
- In a mixing bowl, whip 1 cup of heavy cream until soft peaks form.
- Gently fold the melted chocolate mixture into the whipped cream.
- In another bowl, whip the remaining heavy cream with powdered sugar and vanilla until stiff peaks form.
- Fold the raspberry puree into this mixture.
- Carefully combine both mousse mixtures.
- Pour over the chocolate cake base and refrigerate for at least 240 minutes or until set.
- Once set, garnish with fresh raspberries before serving.
