  • 1/4 cup milk
  • 2 cups heavy cream, divided
  • 1 cup raspberry puree
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries (for garnish)
  • 1 chocolate cake (for base)

Instructions

  1. Melt the white chocolate with milk in a double boiler, stirring until it becomes smooth.
  2. Allow it to cool slightly.
  3. In a mixing bowl, whip 1 cup of heavy cream until soft peaks form.
  4. Gently fold the melted chocolate mixture into the whipped cream.
  5. In another bowl, whip the remaining heavy cream with powdered sugar and vanilla until stiff peaks form.
  6. Fold the raspberry puree into this mixture.
  7. Carefully combine both mousse mixtures.
  8. Pour over the chocolate cake base and refrigerate for at least 240 minutes or until set.
  9. Once set, garnish with fresh raspberries before serving.
