White Chocolate Raspberry Mousse Cake

Description

A no-bake dessert that combines luxurious white chocolate with tart fresh raspberries, perfect for special occasions.


Ingredients

  • 6 oz white chocolate, chopped
  • 2 cups heavy cream
  • 1 cup raspberry puree
  • 1/4 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 package of graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • Fresh raspberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch springform pan.
  2. Mix the graham cracker crumbs with melted butter and press into the bottom of the pan. Bake for 10 minutes, then let cool.
  3. Melt the white chocolate in a heatproof bowl over simmering water or in the microwave. Let it cool slightly.
  4. Beat the eggs with sugar in a separate bowl until frothy. Add the vanilla and mix.
  5. Whip the heavy cream in another bowl until soft peaks form. Fold the cooled white chocolate and raspberry puree into the whipped cream until combined.
  6. Fold in the egg mixture gently until smooth.
  7. Pour the mousse mixture over the cooled crust and refrigerate for at least 240 minutes or until set.
  8. Garnish with fresh raspberries before serving.

Use high-quality white chocolate for the best flavor. Ensure heavy cream is fully whipped to create a light and airy mousse.
