A no-bake dessert that combines luxurious white chocolate with tart fresh raspberries, perfect for special occasions.

- 6 oz white chocolate, chopped
- 2 cups heavy cream
- 1 cup raspberry puree
- 1/4 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 package of graham cracker crumbs
- 1/2 cup unsalted butter, melted
- Fresh raspberries for garnish
Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8-inch springform pan.
- Mix the graham cracker crumbs with melted butter and press into the bottom of the pan. Bake for 10 minutes, then let cool.
- Melt the white chocolate in a heatproof bowl over simmering water or in the microwave. Let it cool slightly.
- Beat the eggs with sugar in a separate bowl until frothy. Add the vanilla and mix.
- Whip the heavy cream in another bowl until soft peaks form. Fold the cooled white chocolate and raspberry puree into the whipped cream until combined.
- Fold in the egg mixture gently until smooth.
- Pour the mousse mixture over the cooled crust and refrigerate for at least 240 minutes or until set.
- Garnish with fresh raspberries before serving.
Notes
Use high-quality white chocolate for the best flavor. Ensure heavy cream is fully whipped to create a light and airy mousse.
