White Chocolate Blueberry Cheesecake

Description

A creamy and fruity cheesecake featuring luscious layers of white chocolate and fresh blueberries, perfect for any occasion.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • 24 oz cream cheese, softened
  • 8 oz white chocolate, melted and cooled
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups heavy whipping cream, whipped
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1 cup whipped cream
  • Fresh blueberries (for garnish)
  • Extra blueberry sauce for drizzling

Instructions

  1. Combine graham cracker crumbs, melted butter, and sugar in a bowl until evenly coated. Press firmly into the bottom of a 9-inch springform pan and refrigerate while preparing the filling.
  2. In a saucepan, combine blueberries, sugar, and lemon juice over medium heat. Cook until the berries burst and release their juices, about 5–7 minutes.
  3. Mix cornstarch with water and stir into the blueberry mixture. Cook for 1 minute until thickened. Cool completely.
  4. In a large bowl, beat the cream cheese until smooth and fluffy. Add the melted white chocolate, powdered sugar, and vanilla extract. Beat until creamy.
  5. Fold in the whipped cream until light and airy.
  6. Spread half of the cheesecake filling into the crust. Spoon small amounts of blueberry sauce over the filling and gently swirl.
  7. Add the remaining filling and smooth the top.
  8. Add more blueberry sauce to the surface and create beautiful swirls using a skewer or knife.
  9. Refrigerate for at least 360 minutes or overnight until firm.
  10. Decorate with whipped cream rosettes, fresh blueberries, and a drizzle of blueberry sauce before serving.

Notes

Make sure cream cheese is at room temperature for a smooth mixture. For a thicker crust, increase graham cracker crumbs and butter.
