Description

A comforting casserole dish that combines flavors of traditional Mexican tamales with a hearty filling and cornmeal or masa crust.


Ingredients

  • 1 cup all-purpose flour (or gluten-free flour blend)
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk (or plant-based milk for vegan)
  • 1 large egg (or flax egg for vegan)
  • ½ cup shredded cheddar cheese (optional)
  • 2 tablespoons sugar (optional)
  • 1 pound ground beef (or ground turkey for a leaner option)
  • 1 medium onion, diced
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 bell pepper, diced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 2 cloves garlic, minced
  • 1 can enchilada sauce (red or green)
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Whisk together cornmeal, flour, baking powder, and salt in a large bowl.
  3. Combine milk and egg in a separate bowl, then add sugar and cheese if desired.
  4. Add wet ingredients to dry ingredients, stirring until smooth.
  5. Spread half of the batter evenly over the bottom of the baking dish.
  6. Brown the ground beef in a large skillet over medium heat, then drain fat.
  7. Add onion, bell pepper, and corn; cook for 3-5 minutes.
  8. Stir in chili powder, cumin, and garlic, cooking for another minute.
  9. Pour in enchilada sauce and simmer for 5-7 minutes.
  10. Remove from heat and mix in cheese if using.
  11. Pour the filling over the first layer of cornbread batter.
  12. Spoon the remaining cornbread batter over the filling.
  13. Bake for 25-30 minutes until the crust is golden brown.
  14. Cool for 5-10 minutes before serving.

Notes

For a vegetarian version, replace ground beef with black beans or pinto beans. For a gluten-free option, use masa harina or gluten-free cornmeal.
