- 1 cup all-purpose flour (or gluten-free flour blend)
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup milk (or plant-based milk for vegan)
- 1 large egg (or flax egg for vegan)
- ½ cup shredded cheddar cheese (optional)
- 2 tablespoons sugar (optional)
- 1 pound ground beef (or ground turkey for a leaner option)
- 1 medium onion, diced
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 bell pepper, diced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 2 cloves garlic, minced
- 1 can enchilada sauce (red or green)
- 1 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Whisk together cornmeal, flour, baking powder, and salt in a large bowl.
- Combine milk and egg in a separate bowl, then add sugar and cheese if desired.
- Add wet ingredients to dry ingredients, stirring until smooth.
- Spread half of the batter evenly over the bottom of the baking dish.
- Brown the ground beef in a large skillet over medium heat, then drain fat.
- Add onion, bell pepper, and corn; cook for 3-5 minutes.
- Stir in chili powder, cumin, and garlic, cooking for another minute.
- Pour in enchilada sauce and simmer for 5-7 minutes.
- Remove from heat and mix in cheese if using.
- Pour the filling over the first layer of cornbread batter.
- Spoon the remaining cornbread batter over the filling.
- Bake for 25-30 minutes until the crust is golden brown.
- Cool for 5-10 minutes before serving.
Notes
For a vegetarian version, replace ground beef with black beans or pinto beans. For a gluten-free option, use masa harina or gluten-free cornmeal.
