- 4 oz jar diced pimentos, drained
- 1/2 cup mayonnaise
- 4 oz cream cheese, softened (optional)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Hot sauce to taste (optional)
- Chopped pickles or jalapeños (optional)
Instructions
- Grate the cheese and set aside.
- Prepare the pimentos by draining and chopping, if necessary.
- Mix the grated cheddar and pimentos with mayonnaise in a large bowl.
- Optional: Add softened cream cheese and blend until smooth.
- Incorporate any spices or hot sauce as desired.
- Chill in the refrigerator for at least 1 hour before serving.
- Serve with crackers, sandwiches, or as a dip.
Notes
For a spicier version, add more cayenne or hot sauce. Pimento cheese can be frozen, but texture may change upon thawing.
