Ingredients

  • 2 cups heavy cream
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 3 large eggs (separated)
  • 1 tablespoon unflavored gelatin
  • 1/4 cup water
  • 1 cup vanilla cake (crumbled)
  • Fresh berries (for garnish)

Instructions

  1. Sprinkle gelatin over water in a small bowl and let it sit for 5 minutes to soften.
  2. Heat heavy cream in a saucepan over medium heat until it simmers. Remove from heat and stir in the softened gelatin until dissolved.
  3. Beat egg yolks and sugar in a mixing bowl until light and fluffy. Gradually add the gelatin-cream mixture while whisking.
  4. Beat the egg whites in another bowl until stiff peaks form. Gently fold into the cream mixture.
  5. Fold in the vanilla extract.
  6. Layer crumbled vanilla cake in a serving dish or cake mold and pour the mousse over it. Refrigerate for at least 240 minutes or until set.
  7. Serve chilled, garnished with fresh berries.

Notes

For an elegant touch, sprinkle powdered sugar on top. This cake pairs wonderfully with a drizzle of chocolate sauce or a side of whipped cream.
