- 2 cups heavy cream
- 1 cup granulated sugar
- 1 tablespoon vanilla extract
- 3 large eggs (separated)
- 1 tablespoon unflavored gelatin
- 1/4 cup water
- 1 cup vanilla cake (crumbled)
- Fresh berries (for garnish)
Instructions
- Sprinkle gelatin over water in a small bowl and let it sit for 5 minutes to soften.
- Heat heavy cream in a saucepan over medium heat until it simmers. Remove from heat and stir in the softened gelatin until dissolved.
- Beat egg yolks and sugar in a mixing bowl until light and fluffy. Gradually add the gelatin-cream mixture while whisking.
- Beat the egg whites in another bowl until stiff peaks form. Gently fold into the cream mixture.
- Fold in the vanilla extract.
- Layer crumbled vanilla cake in a serving dish or cake mold and pour the mousse over it. Refrigerate for at least 240 minutes or until set.
- Serve chilled, garnished with fresh berries.
Notes
For an elegant touch, sprinkle powdered sugar on top. This cake pairs wonderfully with a drizzle of chocolate sauce or a side of whipped cream.
