Description
This decadent mousse cake features silky white chocolate layers and vibrant raspberry, perfect for any celebration.
Ingredients

- 1 cup white chocolate chips
- 2 cups heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup raspberries
- 1 package of sponge cake or ladyfingers
- 2 tablespoons gelatin
- 1/4 cup cold water
- Fresh raspberries and white chocolate shavings for garnish
Instructions
- Melt the white chocolate in a double boiler or microwave until smooth. Allow it to cool slightly.
- Whip together 1 1/2 cups of heavy cream with sugar and vanilla until soft peaks form.
- Dissolve the gelatin in cold water in another bowl and let it sit for a few minutes until thickened. Then, gently heat until it liquefies.
- Fold the melted white chocolate into the whipped cream, then stir in the gelatin mixture.
- Layer the sponge cake or ladyfingers at the bottom of a serving dish.
- Spread half of the mousse mixture over the cake layers, followed by a layer of fresh raspberries.
- Top with the remaining mousse mixture and refrigerate for at least 4 hours or overnight.
- Whip the remaining heavy cream and spread it over the top, garnishing with fresh raspberries and white chocolate shavings.
Notes
Use high-quality white chocolate for the best flavor and be sure to let the mousse cool before folding it into the whipped cream.
