- 8 ounces semi-sweet chocolate, melted and cooled
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- Chocolate curls, for decoration
- Chocolate shavings, for decoration
- Chocolate buttercream swirls, for decoration
- Cocoa powder (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and line a rectangular cake pan.
- In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, combine the eggs, sugar, milk, oil, and vanilla.
- Gradually add the dry ingredients to the wet mixture.
- Slowly pour in the hot coffee or hot water. Do not worry if the batter appears thin.
- Pour the batter into the prepared pan and bake for approximately 25 to 30 minutes.
- Allow the cake to cool completely.
- Begin melting the chocolate for the mousse layer.
- In a chilled bowl, whip the heavy cream until soft peaks form.
- Add the powdered sugar and vanilla extract.
- Continue whipping until medium peaks develop.
- Gently fold the melted chocolate into the whipped cream.
- Spread the mousse evenly over the cooled cake layer.
- Place the cake in the refrigerator for at least one hour.
- Heat the heavy cream for the ganache until steaming but not boiling.
- Pour it over the chocolate chips and let it sit for two minutes.
- Stir slowly until completely smooth.
- Carefully pour the ganache over the chilled mousse.
- Return the cake to the refrigerator and allow the ganache to set.
- Pipe decorative chocolate swirls on top.
- Scatter chocolate curls and shavings over the frosting swirls.
Notes
Chilling the cake enhances the flavors and texture. It can be made a day in advance for best results.
