  • 2 large eggs
  • ¾ cup granulated sugar

  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup hot coffee or hot water
  • 2 cups heavy whipping cream
  • 8 ounces semi-sweet chocolate, melted and cooled
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • Chocolate curls, for decoration
  • Chocolate shavings, for decoration
  • Chocolate buttercream swirls, for decoration
  • Cocoa powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and line a rectangular cake pan.
  3. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  4. In a separate bowl, combine the eggs, sugar, milk, oil, and vanilla.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Slowly pour in the hot coffee or hot water. Do not worry if the batter appears thin.
  7. Pour the batter into the prepared pan and bake for approximately 25 to 30 minutes.
  8. Allow the cake to cool completely.
  9. Begin melting the chocolate for the mousse layer.
  10. In a chilled bowl, whip the heavy cream until soft peaks form.
  11. Add the powdered sugar and vanilla extract.
  12. Continue whipping until medium peaks develop.
  13. Gently fold the melted chocolate into the whipped cream.
  14. Spread the mousse evenly over the cooled cake layer.
  15. Place the cake in the refrigerator for at least one hour.
  16. Heat the heavy cream for the ganache until steaming but not boiling.
  17. Pour it over the chocolate chips and let it sit for two minutes.
  18. Stir slowly until completely smooth.
  19. Carefully pour the ganache over the chilled mousse.
  20. Return the cake to the refrigerator and allow the ganache to set.
  21. Pipe decorative chocolate swirls on top.
  22. Scatter chocolate curls and shavings over the frosting swirls.

Notes

Chilling the cake enhances the flavors and texture. It can be made a day in advance for best results.
