This quick and easy chicken enchiladas recipe is a perfect choice for a flavorful and satisfying meal that the whole family will love.


Ingredients

  • 2 cups cooked shredded chicken
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 1/2 cup chopped onions (optional)
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat and sauté the onions until translucent.
  3. Mix the shredded chicken, 1 cup of cheese, enchilada sauce, cumin, garlic powder, salt, and pepper in a large bowl.
  4. Take about 1/4 cup of the chicken mixture and place it in the center of each tortilla, rolling them up and laying them seam side down in a greased baking dish.
  5. Pour any leftover enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
  6. Bake for 20-25 minutes until the cheese is melted and bubbly.
  7. Garnish with fresh cilantro before serving hot.

Notes

Feel free to add beans or veggies to the filling for added nutrition. Customize your sauce by using either green or red enchilada sauce.
