Description

A decadent Brazilian cake featuring rich chocolate sponge layers, cognac-infused soak, and brigadeiro frosting, perfect for celebrations.


Ingredients

  • 8 large eggs
  • 300 ml whole milk
  • 255 ml vegetable oil
  • 2 ¼ cups (360g) brown sugar
  • 2 teaspoons vanilla paste (or 4 teaspoons vanilla extract)
  • 2 ¾ cups (365g) all-purpose flour
  • ½ cup (37g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • A pinch of fine salt
  • 3 tablespoons cocoa powder
  • 2 tablespoons granulated sugar
  • ¼ cup whole milk
  • ½ cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon premium cognac
  • 2 cans (28 oz total) sweetened condensed milk
  • 280 g bittersweet chocolate, roughly chopped
  • 2 tablespoons unsalted butter
  • 1 can (225ml) Media Crema (serum removed)
  • 2 cans (28 oz total) sweetened condensed milk
  • 300 g bittersweet chocolate, roughly chopped
  • To Finish: High-quality chocolate sprinkles

Instructions

  1. Preheat the oven to 175°C (350°F) and prepare two 8-inch round cake pans.
  2. Whisk together eggs, milk, vegetable oil, and vanilla paste in a bowl.
  3. Add the brown sugar and whisk until dissolved.
  4. Sift together flour, cocoa powder, baking soda, baking powder, and salt. Mix into the liquid base.
  5. Divide the batter between the prepared pans and bake for 50 minutes. Cool completely.
  6. Slice each cake horizontally to create four layers.
  7. Simmer cocoa powder, sugar, milk, and heavy cream to make the chocolate soak. Add vanilla and cognac after cooling.
  8. Combine sweetened condensed milk, bittersweet chocolate, and butter to create the brigadeiro filling and cool.
  9. Repeat the process to make the brigadeiro frosting, without using Media Crema.
  10. Layer the cake with sponge layers, chocolate soak, and media crema filling, then freeze.
  11. Frost with brigadeiro frosting, coat with chocolate sprinkles, and add truffles on top.
  12. Refrigerate overnight before serving.

Notes

Ensure that the Media Crema is free of serum for proper consistency. Cover the cake in the refrigerator for up to 5 days.
