Description
A simple and nutritious high protein chicken dish cooked effortlessly in a crockpot.
Ingredients

- 2 pounds of chicken breast (or any preferred protein)
- 1 can of black beans, rinsed and drained
- 1 can of corn, drained
- 1 cup of diced tomatoes
- 1 packet of taco seasoning (or use homemade)
- 1 cup of low-sodium chicken broth
- Optional toppings: avocado, shredded cheese, cilantro, or Greek yogurt
Instructions
- Start by placing the chicken breast at the bottom of the crockpot.
- Next, add the black beans, corn, and diced tomatoes on top.
- Sprinkle the taco seasoning over everything, then pour the chicken broth in.
- Cover the crockpot and set it to cook on low for 360 minutes or on high for 240 minutes.
- Once cooked, shred the chicken with two forks and stir everything together.
- Serve warm with your favorite toppings.
Notes
For extra flavor, try adding chopped onions or garlic. Consider adding jalapeños for spice.
