Description

A simple and nutritious high protein chicken dish cooked effortlessly in a crockpot.


Ingredients

  • 2 pounds of chicken breast (or any preferred protein)
  • 1 can of black beans, rinsed and drained
  • 1 can of corn, drained
  • 1 cup of diced tomatoes
  • 1 packet of taco seasoning (or use homemade)
  • 1 cup of low-sodium chicken broth
  • Optional toppings: avocado, shredded cheese, cilantro, or Greek yogurt

Instructions

  1. Start by placing the chicken breast at the bottom of the crockpot.
  2. Next, add the black beans, corn, and diced tomatoes on top.
  3. Sprinkle the taco seasoning over everything, then pour the chicken broth in.
  4. Cover the crockpot and set it to cook on low for 360 minutes or on high for 240 minutes.
  5. Once cooked, shred the chicken with two forks and stir everything together.
  6. Serve warm with your favorite toppings.

Notes

For extra flavor, try adding chopped onions or garlic. Consider adding jalapeños for spice.
