- 1 cup coconut cream
- 1/2 cup pink guava pulp (fresh or canned)
- 1/2 cup sugar
- 1 tablespoon gelatin (or agar-agar for a vegetarian option)
- 3 eggs (beaten)
- 1 cup whipped cream
Instructions
- Dissolve gelatin in warm water and let it cool slightly.
- Combine coconut cream, guava pulp, and sugar in a saucepan over low heat. Stir until sugar dissolves.
- Gradually add the beaten eggs to the mixture, stirring constantly. Cook for about 5 minutes until thickened.
- Remove from heat and fold in the dissolved gelatin.
- Let the mixture cool before gently folding in the whipped cream.
- Pour the mousse into a prepared slice pan and refrigerate for at least 240 minutes or until set.
Notes
For a more impressive presentation, try pouring a glossy mirror glaze over the top before serving.
