  • ¼ cup Gelatin Powder (for glaze)
  • ½ cup Water (for glaze)

Instructions

  1. Prep the dish and mousse base by lining an 8×8-inch square baking dish with parchment paper.
  2. Combine 1 cup of pink guava puree, 1 cup of thick coconut cream, ½ cup of sugar, and 1 teaspoon of vanilla extract in a large mixing bowl and whisk until smooth.
  3. Hydrate the gelatin by sprinkling it over ½ cup of warm water and letting it sit for 2-3 minutes.
  4. Incorporate the dissolved gelatin mixture into the guava-coconut bowl, whisk until combined, and pour into the prepared dish.
  5. Chill in the refrigerator for 3-4 hours until set.
  6. Prep the mirror glaze by combining ½ cup of guava puree, ½ cup of sugar, ¼ cup of gelatin, and ½ cup of water in a saucepan and heating until dissolved.
  7. Cool the glaze to room temperature before pouring it over the set mousse layer.
  8. Return the dessert to the fridge for at least 2 hours to set the glaze.
  9. Lift the dessert out using the parchment paper and slice into elegant portions before serving chilled.
