  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup crushed pineapple, well drained
  • 1 cup pineapple tidbits, well drained
  • 1 tablespoon fresh lemon juice
  • 1 1/2 cups heavy whipping cream, whipped to stiff peaks
  • 1 1/2 cups fresh pineapple chunks
  • Extra whipped cream (optional)

Instructions

  1. In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until evenly moistened.
  2. Press this mixture firmly into the bottom of a 9-inch springform pan. Refrigerate the crust for at least 30 minutes while you prepare the filling.
  3. In a large bowl, beat the softened cream cheese until smooth and creamy.
  4. Mix in the powdered sugar, vanilla extract, and lemon juice until well combined.
  5. Gently fold in the well-drained crushed pineapple and pineapple tidbits.
  6. Next, fold the whipped cream into the cheesecake mixture until it is light and fluffy, being careful not to overmix.
  7. Spread the filling evenly over the chilled crust and smooth the top.
  8. Cover and refrigerate for at least 6 hours, preferably overnight, until fully set.
  9. Before serving, top with fresh pineapple chunks and, if desired, a dollop of whipped cream.
  10. To achieve cleaner slices, dip a sharp knife in warm water and wipe it dry between each cut.

Notes

For a unique twist, consider using other fruits like mango or strawberry. Ensure all ingredients are at room temperature for easier mixing.
