Instructions
- Preheat your oven to 350°F. Grease and line two 8-inch cake pans with parchment paper.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- Add the softened butter, eggs, milk, and vanilla extract. Beat until the mixture is smooth and fluffy.
- Divide the batter evenly between the prepared pans and bake for 28–32 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool completely before assembling.
- For the whipped cream frosting, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract, then slowly fold in the whipped heavy cream until light and airy.
- Frost between the cake layers and around the outside with a smooth bakery-style finish.
- Press the toasted coconut flakes around the bottom edge of the cake for added crunch and tropical flavor.
- Arrange the kiwi slices around the sides of the cake in an overlapping pattern.
- Decorate the top generously with mango chunks, peach slices, blueberries, raspberries, and additional kiwi for a colorful fruit-packed finish.
- Heat the apricot preserves with water until smooth, then lightly brush over the fruit for a glossy bakery-style shine.
- Pipe whipped cream swirls around the base and chill the cake for at least 30 minutes before slicing.
