Description

An elegant dessert featuring three layers of chocolate: a rich cake base, creamy milk chocolate mousse, and light chocolate mousse topped with glossy ganache.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ⅓ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup hot coffee or hot water
  • 200g milk chocolate, melted
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 200g semi-sweet chocolate, melted
  • 1½ cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 200g dark chocolate
  • ¾ cup heavy cream
  • Chocolate curls for decoration
  • Chocolate shavings for decoration
  • Whipped cream rosettes for decoration
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and line your baking pan with parchment paper.
  3. Whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  4. Add egg, milk, oil, and vanilla and mix until smooth.
  5. Pour in the hot coffee while whisking continuously.
  6. Pour the batter into the prepared pan.
  7. Bake for 20–25 minutes or until a toothpick comes out clean.
  8. Allow the cake to cool completely.
  9. Melt the milk chocolate and set aside to cool slightly.
  10. Whip the heavy cream in a chilled bowl until soft peaks form.
  11. Fold melted chocolate into the whipped cream gently.
  12. Spread the mousse over the cooled cake layer and refrigerate for 30 minutes to set.
  13. Melt the semi-sweet chocolate and let cool slightly.
  14. Whip heavy cream until soft peaks form and then fold the chocolate into the cream.
  15. Spread over the first mousse layer, refrigerating for at least 1 hour.
  16. Heat heavy cream until steaming, then pour over chopped dark chocolate.
  17. Stir until smooth and glossy, then let cool slightly before pouring over the mousse layer.
  18. Decorate the chilled cake with whipped cream rosettes, chocolate curls, shavings, and cocoa powder.

Notes

Use high-quality chocolate for the best flavor. Chill between layers for clean cuts and a better texture.
