- 1 lb medium-sized fresh shrimp
- 1/4 cup freshly squeezed lime juice
- 1/2 cup tomato ketchup
- 2 cloves garlic, finely minced
- 1/4 cup finely chopped onion
- 1/4 cup freshly chopped cilantro
- Hot sauce (aji) to taste
- Salt and pepper to taste
- Avocado slices (optional, for serving)
Instructions
- Boil the shrimp: Bring a pot of salted water to a boil, add the cleaned shrimp, and cook for 2-3 minutes until they turn opaque and pink.
- Cool the shrimp: Drain and submerge them in ice water to stop the cooking process.
- Mix the sauce: In a bowl, combine lime juice, tomato ketchup, cilantro, onion, and garlic.
- Add hot sauce: Stir in your desired amount of hot sauce and season with salt and pepper.
- Combine the shrimp: Add the shrimp to the sauce mix, toss gently to coat.
- Chill: Cover and refrigerate for at least 30 minutes.
- Serve: Ladle cocktail into glasses, garnish with avocado slices and cilantro if desired.
Notes
For a creamier texture, consider adding a dollop of mayonnaise on top before serving.
