Ingredients

  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup creamy peanut butter (or chocolate hazelnut spread)
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 cups milk chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×13-inch baking pan with parchment paper.
  3. Cream together the butter and both sugars until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla.
  5. Whisk together the flour, cocoa powder, baking powder, and salt in another bowl.
  6. Mix the dry ingredients into the wet ingredients until combined.
  7. Spread the dough evenly into the prepared pan.
  8. Bake for 20–25 minutes, or until the center is just set.
  9. Allow the base to cool completely.
  10. Using an electric mixer, beat together the peanut butter, softened butter, powdered sugar, vanilla, and salt until smooth, fluffy, and creamy.
  11. Spread the cream filling evenly over the cooled chocolate base.
  12. Refrigerate for 30 minutes.
  13. Heat the chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  14. Pour the melted chocolate over the chilled filling and spread evenly.
  15. Chill for at least 2 hours, or until the chocolate coating is firm.

Notes

For the best results, use room-temperature butter and chill each layer before adding the next.
