  • 1/4 cup unsweetened cocoa powder

  • 1/4 tsp baking soda
  • 1/2 cup granulated sugar
  • 1/4 cup neutral vegetable oil

  • 1/2 tsp white vinegar or lemon juice
  • 1/2 tsp vanilla extract
  • 1/4 cup warm milk
  • 1 tsp granulated sugar
  • 1/2 tsp instant coffee powder (optional)
  • 1 cup heavy cream
  • 1/2 cup semi-sweet chocolate, finely chopped
  • 1 tbsp cocoa powder
  • 1/4 cup heavy cream
  • 2 tbsp Dutch-process cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
  2. Whisk together the milk, oil, sugar, vanilla, and vinegar in a large mixing bowl. Let it sit for 2 minutes.
  3. Sift in the flour, cocoa powder, baking powder, and baking soda. Stir gently until a smooth batter forms, but avoid overmixing.
  4. Pour the batter into the prepared pan and spread it evenly. Bake for 15–18 minutes or until a toothpick inserted comes out clean. Cool the cake completely.
  5. Mix the warm milk, sugar, and coffee powder until dissolved. Poke holes in the cooled cake using a fork. Slowly pour the milk soak over the cake and allow it to absorb.
  6. Heat the heavy cream until simmering, then pour over the chopped chocolate and cocoa powder. Let it stand for 1 minute and whisk until smooth. Refrigerate for 45–60 minutes until thickened.
  7. Spread the chocolate pudding evenly over the soaked cake.
  8. Combine the chocolate and heavy cream in a heatproof bowl, microwaving until smooth. Let it cool slightly, then pour over the pudding layer.
  9. Refrigerate for 2–3 hours until firm. Dust with cocoa powder before serving.
  10. Slice and enjoy chilled, optionally serving with whipped cream or fresh berries.

Notes

Ensure all ingredients are at room temperature for better consistency. Avoid overmixing for a soft sponge texture.
