Description

A no-bake Ice Cream Cookie Cake featuring buttery chocolate cookie crust, creamy vanilla ice cream, rich chocolate fudge, and crunchy chocolate chips, perfect for summer parties and celebrations.


Ingredients

  • 2 cups crushed chocolate cookies
  • ¼ cup melted butter
  • 1 liter vanilla ice cream
  • ½ cup crushed cookies
  • ½ cup chocolate fudge sauce
  • Remaining fudge sauce
  • ½ cup chocolate chips

Instructions

  1. Crush the chocolate cookies into fine crumbs using a food processor or rolling pin.
  2. Mix the crumbs with melted butter until the texture resembles wet sand.
  3. Press the mixture firmly into the bottom of a springform pan.
  4. Place the crust into the freezer for 15 minutes.
  5. Remove the vanilla ice cream from the freezer about 10–15 minutes before assembling.
  6. Place the softened ice cream into a chilled mixing bowl.
  7. Fold in the crushed cookies and half of the chocolate fudge sauce.
  8. Spread the ice cream mixture evenly over the chilled cookie crust.
  9. Drizzle the remaining fudge sauce across the surface in a zigzag pattern.
  10. Sprinkle chocolate chips evenly over the top.
  11. Freeze for at least 4–6 hours, preferably overnight.
  12. Allow the cake to sit at room temperature for about 5 minutes before slicing.
