- 25 ounces leftover shredded chicken or thoroughly drained canned chicken
- 1 large egg
- ¼ cup breadcrumbs
- 1 teaspoon Dijon mustard
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ⅛ teaspoon dried thyme
- Salt and black pepper, to taste
- Cooking oil, for shallow frying
Instructions
- Combine the chicken, egg, breadcrumbs, Dijon mustard, garlic powder, onion powder, and thyme in a large mixing bowl. Season with salt and pepper.
- Divide the mixture into equal portions and shape them into 6 medium-sized patties or 12 smaller fritters.
- Heat the oil in a skillet over medium-high heat until shimmering.
- Fry the patties in the hot oil, leaving space between them.
- Flip them to fry the other side until golden brown and crispy.
- Drain the finished fritters on paper towels and serve immediately.
Notes
Use canned chicken? Make sure to press it to remove excess water. Pair with a salad or dipping sauce for best results.
