Crispy and sweet Thai Fried Banana Spring Rolls are a delicious street food dessert featuring warm bananas wrapped in pastry and fried to perfection.

- 2 ripe Bananas
- Spring Roll Wrappers (as needed)
- Oil for Frying (high-smoke point, such as vegetable, canola, or peanut oil)
Instructions
- Slice the bananas: Peel the bananas and slice each in half crosswise. Cut each half again lengthwise to have 8 neat quarter-strips. Set aside.
- Assemble and seal the rolls: Place a spring roll wrapper on your work surface positioned like a diamond. Lay a piece of banana near the bottom corner. Fold the bottom corner tightly up over the banana and roll forward once. Fold the left and right side corners inward toward the center. Continue rolling tightly upward, dab the top corner with water, and press to seal closed.
- Deep fry to golden perfection: Heat oil in a deep pan or wok over medium heat until it reaches 160–170°C (320–340°F). Fry the banana rolls in small batches for 3 to 5 minutes until uniformly golden brown and crispy. Use tongs to remove them and drain on paper towels or a wire rack.
- Drizzle, garnish, and serve warm: Transfer the warm rolls to a plate, drizzle generously with sweetened condensed milk or caramel sauce, sprinkle with sesame seeds or crushed peanuts, and serve immediately while hot!
Notes
Choose bananas that are ripe but firm to prevent mushy results. Keep frying oil at a steady temperature for optimal crunch.
