- 1/2 pound jumbo shrimp (peeled and deveined)
- 1/4 cup teriyaki sauce
- 3 cloves garlic (minced)
- Kosher salt
- Pepper
- Blackstone Sweet Teriyaki seasoning blend (optional)
- Cooking oil of choice
- 2 (8-ounce) microwave pouches Jasmine rice (such as Ben’s Ready Rice)
- 1 large avocado (sliced)
- 1/4 cup chopped cilantro
- 2 lime wedges
- Sauce of choice: yum yum sauce, sriracha, spicy mayo, more teriyaki sauce
Instructions
- Pat the shrimp dry and place them in a bowl, adding the teriyaki sauce, minced garlic, kosher salt, pepper, and Sweet Teriyaki seasoning (if using). Toss until well combined and let marinate for 5 to 10 minutes.
- Preheat your skillet or Blackstone griddle (around medium heat, 400 degrees for indoor griddle). Add your cooking oil and the shrimp along with the marinade.
- Cook the shrimp for about 3 to 5 minutes, stirring occasionally. Meanwhile, microwave the rice pouches, or add uncooked rice to the griddle with some water and cook it alongside the shrimp, breaking apart the rice as it cooks.
- Serve the rice in a bowl topped with shrimp, sliced avocado, chopped cilantro, lime wedges, and your choice of sauce such as yum yum sauce, sriracha, spicy mayo, or more teriyaki sauce.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To revitalize when reheating, consider adding a splash of teriyaki sauce.
