Description

  • 5 tbsp unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, chopped
  • 1/3 cup granulated sugar for glaze
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water
  • Fresh strawberry halves for decoration
  • Whipped cream swirls for decoration
  • Chocolate shavings or curls for decoration
  • Heart-shaped candies or fondant hearts for decoration
  • Red velvet crumbs for decoration

Instructions

  1. Preheat your oven to 325°F. Grease a heart-shaped springform pan or line it with parchment paper.
  2. Mix the red velvet cake crumbs with melted butter until they are evenly coated. Press this mixture into the bottom of the pan to create a crust.
  3. Beat the cream cheese until smooth. Then, add the granulated sugar and mix until combined.
  4. Add the eggs one at a time, ensuring each is well incorporated. Fold in the sour cream and vanilla extract gently.
  5. Pour the cheesecake filling over the crust and smooth out the top.
  6. Place the pan inside a larger baking dish and fill it halfway with hot water.
  7. Bake for 60–70 minutes, until the edges are set but the center still jiggles slightly.
  8. Once done, turn off the oven, crack the door, and let the cheesecake cool for one hour.
  9. Refrigerate for at least six hours or overnight for best results.
  10. Combine the chopped strawberries, sugar, and lemon juice in a saucepan. Cook until the strawberries are softened, then add the cornstarch slurry and simmer until thick. Allow to cool slightly before pouring it over the cheesecake.
  11. Decorate with whipped cream, fresh strawberry halves, chocolate curls, and heart-shaped decorations for that sweet touch.
  12. Chill briefly before slicing.

Notes

Make sure your cream cheese is at room temperature to avoid lumps. Don’t overmix the batter as this can introduce too much air, causing cracks while baking. Always cool your cheesecake gradually to prevent cracks on the surface.
