- 1 cup rice (white or brown)
- 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots)
- 1/4 cup hot honey
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Cook the rice according to package instructions.
- Heat olive oil in a skillet over medium-high heat.
- Season the chicken with salt and pepper, then add it to the skillet. Cook for 5-7 minutes on each side, or until cooked through.
- Remove the chicken from the skillet, let it rest for a few minutes, then slice it.
- Add mixed vegetables and sauté for 3-4 minutes until tender-crisp.
- Mix hot honey and soy sauce in a small bowl.
- Layer rice, sliced chicken, and sautéed vegetables in serving bowls, then drizzle with the hot honey sauce.
- Garnish with green onions if desired and serve warm.
