Ingredients

  • 1 pound boneless, skinless chicken breast
  • 1 cup rice (white or brown)
  • 2 cups mixed vegetables (such as bell peppers, broccoli, and carrots)
  • 1/4 cup hot honey
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Cook the rice according to package instructions.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Season the chicken with salt and pepper, then add it to the skillet. Cook for 5-7 minutes on each side, or until cooked through.
  4. Remove the chicken from the skillet, let it rest for a few minutes, then slice it.
  5. Add mixed vegetables and sauté for 3-4 minutes until tender-crisp.
  6. Mix hot honey and soy sauce in a small bowl.
  7. Layer rice, sliced chicken, and sautéed vegetables in serving bowls, then drizzle with the hot honey sauce.
  8. Garnish with green onions if desired and serve warm.
