Delicious and beautiful tartlets filled with creamy vanilla and topped with fresh strawberries, perfect for any occasion.

- 1 1/4 cups (160g) all-purpose flour
- 1/2 cup (115g) unsalted butter, softened
- 1/3 cup (40g) powdered sugar
- 1 egg yolk
- 1 tsp vanilla extract
- Pinch of salt
- 1 cup (250ml) whole milk
- 1 vanilla bean or 1 tsp vanilla paste
- 3 egg yolks
- 1/4 cup (50g) sugar
- 2 tbsp cornstarch
- 1 tbsp butter
- 3/4 cup (180ml) heavy whipping cream, whipped
- 1 lb fresh strawberries, sliced
- Fresh mint leaves
- Strawberry glaze or warmed strawberry jam
- Optional edible gold flakes
Instructions
- Begin by preheating your oven to 350°F (175°C) and greasing the tartlet molds.
- Cream the softened butter and powdered sugar until smooth and fluffy.
- Incorporate the egg yolk and vanilla extract, then fold in the flour and salt until a soft dough forms.
- Wrap the dough in plastic and chill for about 30 minutes.
- Roll the chilled dough and press it into the tartlet molds, pricking the bottoms lightly.
- Bake for 15–18 minutes until golden brown and crisp, then cool completely.
- Heat the milk and vanilla in a saucepan until warm.
- Whisk together the egg yolks, sugar, and cornstarch in a separate bowl.
- Slowly pour the warm milk into the egg mixture while whisking constantly.
- Return the mixture to the saucepan and cook over medium heat until thickened.
- Stir in the butter and let it cool completely.
- Fold in the whipped cream to create the vanilla diplomat cream.
- Fill each tart shell with the diplomat cream, then arrange strawberry slices on top.
- Brush with strawberry glaze or warmed jam and add mint leaves and gold flakes for garnish.
- Serve chilled for the best flavor and texture.
Notes
Store leftovers in the refrigerator. For best texture, keep cream and shells separate until serving.
