Description

Delicious and beautiful tartlets filled with creamy vanilla and topped with fresh strawberries, perfect for any occasion.


Ingredients

  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 cup (115g) unsalted butter, softened
  • 1/3 cup (40g) powdered sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup (250ml) whole milk
  • 1 vanilla bean or 1 tsp vanilla paste
  • 3 egg yolks
  • 1/4 cup (50g) sugar
  • 2 tbsp cornstarch
  • 1 tbsp butter
  • 3/4 cup (180ml) heavy whipping cream, whipped
  • 1 lb fresh strawberries, sliced
  • Fresh mint leaves
  • Strawberry glaze or warmed strawberry jam
  • Optional edible gold flakes

Instructions

  1. Begin by preheating your oven to 350°F (175°C) and greasing the tartlet molds.
  2. Cream the softened butter and powdered sugar until smooth and fluffy.
  3. Incorporate the egg yolk and vanilla extract, then fold in the flour and salt until a soft dough forms.
  4. Wrap the dough in plastic and chill for about 30 minutes.
  5. Roll the chilled dough and press it into the tartlet molds, pricking the bottoms lightly.
  6. Bake for 15–18 minutes until golden brown and crisp, then cool completely.
  7. Heat the milk and vanilla in a saucepan until warm.
  8. Whisk together the egg yolks, sugar, and cornstarch in a separate bowl.
  9. Slowly pour the warm milk into the egg mixture while whisking constantly.
  10. Return the mixture to the saucepan and cook over medium heat until thickened.
  11. Stir in the butter and let it cool completely.
  12. Fold in the whipped cream to create the vanilla diplomat cream.
  13. Fill each tart shell with the diplomat cream, then arrange strawberry slices on top.
  14. Brush with strawberry glaze or warmed jam and add mint leaves and gold flakes for garnish.
  15. Serve chilled for the best flavor and texture.

Notes

Store leftovers in the refrigerator. For best texture, keep cream and shells separate until serving.
