Description

Delicious doughnuts infused with fresh strawberries and topped with a luscious glaze and whipped cream.


Ingredients

  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground nutmeg (optional)
  • ¾ cup whole milk
  • 2 large eggs
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Oil for frying (vegetable or canola)
  • 1 cup fresh strawberries, finely mashed
  • 2 cups powdered sugar
  • 1 teaspoon lemon juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Crushed shortbread cookies or graham crackers (optional)
  • Fresh strawberry slices (optional)

Instructions

  1. Prepare the Dough: In a large bowl, whisk together flour, sugar, baking powder, salt, and nutmeg. In another bowl, mix milk, eggs, melted butter, and vanilla extract. Gradually combine wet and dry ingredients until a soft dough forms. Turn the dough onto a lightly floured surface and gently knead for 1–2 minutes.
  2. Shape the Doughnuts: Roll out the dough to about ½-inch thickness. Use a doughnut cutter (or two round cutters) to cut out doughnut shapes. Place them on a parchment-lined tray and let them rest for 10 minutes.
  3. Fry the Doughnuts: Heat oil in a deep pan to 350°F (175°C). Carefully place doughnuts into the hot oil, a few at a time. Fry for about 1–2 minutes per side, until golden brown. Remove and place on a wire rack lined with paper towels to drain excess oil.
  4. Make the Strawberry Glaze: Mash strawberries until smooth. In a bowl, whisk together powdered sugar, mashed strawberries, lemon juice, and vanilla extract. Adjust consistency with more sugar or a few drops of milk if needed.
  5. Prepare Whipped Cream: In a chilled bowl, beat heavy cream until soft peaks form. Add powdered sugar and vanilla extract. Continue beating until stiff peaks form.
  6. Assemble the Doughnuts: Dip each cooled doughnut into the strawberry glaze. Let excess glaze drip off. Pipe or spoon whipped cream on top. Sprinkle crushed cookies or graham crackers for that ‘shortcake’ texture. Garnish with fresh strawberry slices.

Notes

These doughnuts are best served fresh, ideally with a side of whipped cream or fresh strawberries.
