Strawberry Oreo Mousse Cake

Description

An elegant no-bake dessert layered with a crunchy Oreo crust, creamy strawberry mousse, and topped with chocolate crumbs and fresh fruit.


Ingredients

  • 2428 Oreo Cookies, divided
  • 1/4 cup Unsalted Butter, melted
  • 2 cups Fresh Strawberries, chopped
  • 1 1/2 cups Heavy Whipping Cream
  • 3/4 cup Powdered Sugar
  • 8 ounces Cream Cheese, softened
  • 1 tablespoon Unflavored Gelatine Powder
  • 1/4 cup Cold Water
  • 68 Fresh Berries or Cherries, for garnish

Instructions

  1. Place 16 Oreo cookies into a food processor and pulse until they are reduced to fine crumbs.
  2. Pour the crumbs into a bowl, add melted butter, and stir until coated.
  3. Transfer the mixture into a springform pan and press firmly to form the crust.
  4. Chill in the refrigerator while preparing the filling.
  5. Blend 2 cups of chopped strawberries until smooth, then strain to remove seeds.
  6. Sprinkle gelatine over cold water in a saucepan and let it bloom for 5 minutes.
  7. Heat the gelatine mixture gently until dissolved, then let cool.
  8. Whip 1 cup of heavy cream in a chilled bowl until stiff peaks form.
  9. Beat cream cheese and powdered sugar together until smooth.
  10. Mix in the strained strawberry puree and gelatine until fully incorporated.
  11. Fold whipped cream into the strawberry mixture gently.
  12. Add chopped Oreo cookies and mix gently.
  13. Pour the filling over the chilled crust and smooth the surface.
  14. Crush 4-5 Oreo cookies into fine dust and sprinkle over the mousse layer.
  15. Cover and chill for at least 4 hours or overnight until set.
  16. Whip remaining heavy cream and pipe rosettes on top.
  17. Garnish each with a cherry or strawberry and serve.

Notes

For a vegan version, substitute heavy cream with plant-based cream and gelatine with agar-agar.
