Ingredients

  • 1 1/2 cups fresh strawberries, pureed
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup gelatin or agar-agar
  • 1/4 cup water
  • 1 pre-made cake base or sponge cake

Instructions

  1. Combine gelatin and water in a saucepan, and let it sit for 5 minutes. Heat over low until dissolved, then let cool.
  2. Beat cream cheese and sugar in a large bowl until smooth. Add vanilla and the strawberry puree, followed by the cooled gelatin mixture.
  3. Whip the heavy cream in another bowl until stiff peaks form. Gently fold the whipped cream into the strawberry mixture.
  4. Place the cake base on a serving plate and pour the mousse over it.
  5. Refrigerate for at least 240 minutes or until set.
  6. Serve chilled, garnished with fresh strawberries if desired.

Ensure your strawberries are ripe for maximum flavor. Allow the gelatin to cool before adding it to prevent curdling the cream cheese. Whipping the cream to stiff peaks is essential for the mousse to hold its shape.
