Ingredients

- 2 cups of fresh strawberries, pureed
- 1/2 cup of sugar
- 1 cup of heavy whipping cream
- 1 cup of mascarpone cheese
- 2 teaspoons of gelatin
- 1/4 cup of water
- 1/2 teaspoon of vanilla extract
- 1 pre-made cake (sponge or vanilla)
Instructions
- Sprinkle gelatin over water and let it sit for 5 minutes to soften.
- Combine strawberry puree and sugar in a saucepan over medium heat, stirring occasionally.
- Remove from heat and stir in softened gelatin until dissolved. Let it cool slightly.
- Whip the heavy cream in a large bowl until soft peaks form.
- Mix mascarpone cheese and vanilla extract in another bowl until smooth.
- Fold the whipped cream into the mascarpone mixture.
- Gradually fold in the strawberry mixture until well combined.
- Place the pre-made cake on a serving dish and spread the strawberry mousse over the top and sides.
- Refrigerate for at least 240 minutes until set.
- Serve chilled, garnished with fresh strawberries if desired.
