- 1 cup Crushed freeze-dried strawberries
- 1 cup Unsalted butter, softened
- 4 cups Powdered sugar
- 0.25 cup Heavy cream
- 2 teaspoons Vanilla extract
- 0.5 cup Fresh strawberries, diced
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the all-purpose flour, sugar, baking powder, and salt.
- Add the softened butter and whole milk, and mix until well combined.
- Beat in the eggs and vanilla extract.
- Fold in the pureed strawberries gently.
- Pour the cake batter into prepared cake pans and bake for 25-30 minutes.
- While the cake is baking, combine crushed vanilla wafers, melted butter, and granulated sugar in a bowl.
- Spread the mixture evenly over a baking sheet, and bake until golden.
- Allow the cake to cool before frosting with the creamy mixture made of softened butter, powdered sugar, heavy cream, and vanilla extract.
- Decorate the cake with diced strawberries and the crushed freeze-dried strawberries.
Notes
For best results, use fresh strawberries and let the cake cool completely before applying frosting.
