A delicious Strawberry Crunch Layer Cake featuring layers of strawberry flavor and a crunchy topping for a delightful dessert.

- 1 box of vanilla cake mix
- 3 large eggs
- 1 cup water
- 1/2 cup vegetable oil
- 1 cup fresh strawberries, pureed
- 1/2 cup granulated sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup crushed strawberries or strawberry pie filling
- 1 cup crushed graham crackers
- 1/4 cup butter, melted
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Combine the cake mix, eggs, water, and oil in a large bowl. Mix until well combined. Add the pureed strawberries and stir to combine.
- Divide the batter between the prepared pans and bake for 25 to 30 minutes or until a toothpick inserted comes out clean. Let cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Whip the heavy cream with sugar and vanilla extract until stiff peaks form for the frosting.
- Place one layer of the cake on a serving plate, spread a layer of frosting on top, and add a layer of crushed strawberries or strawberry pie filling.
- Top with the second layer of cake and frost the entire cake with the whipped cream.
- Mix the crushed graham crackers with melted butter and sprinkle on top of the frosted cake.
- Chill in the fridge for 1 hour before serving. Enjoy!
Notes
For a richer flavor, replace some water with milk in the cake mix.
