Description

A delicious Strawberry Crunch Layer Cake featuring layers of strawberry flavor and a crunchy topping for a delightful dessert.


Ingredients

  • 1 box of vanilla cake mix
  • 3 large eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 1 cup fresh strawberries, pureed
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup crushed strawberries or strawberry pie filling
  • 1 cup crushed graham crackers
  • 1/4 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine the cake mix, eggs, water, and oil in a large bowl. Mix until well combined. Add the pureed strawberries and stir to combine.
  3. Divide the batter between the prepared pans and bake for 25 to 30 minutes or until a toothpick inserted comes out clean. Let cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  4. Whip the heavy cream with sugar and vanilla extract until stiff peaks form for the frosting.
  5. Place one layer of the cake on a serving plate, spread a layer of frosting on top, and add a layer of crushed strawberries or strawberry pie filling.
  6. Top with the second layer of cake and frost the entire cake with the whipped cream.
  7. Mix the crushed graham crackers with melted butter and sprinkle on top of the frosted cake.
  8. Chill in the fridge for 1 hour before serving. Enjoy!

Notes

For a richer flavor, replace some water with milk in the cake mix.
