A delightful sour cream coffee cake topped with a sweet maple glaze, perfect for breakfast or an afternoon snack.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 cup sour cream
  • 3/4 cup brown sugar
  • 1 tbsp ground cinnamon
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/3 cup all-purpose flour
  • 4 tbsp melted butter
  • 1 cup powdered sugar
  • 2 tbsp pure maple syrup
  • 12 tbsp milk

Instructions

  1. Preheat your oven to 350°F and grease and flour a 10-inch bundt pan or tube pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Beat the softened butter and sugar together in a large mixing bowl until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract and mix in the sour cream until smooth.
  6. Combine the dry ingredients with the wet mixture gradually, ensuring not to overmix.
  7. Mix the brown sugar, cinnamon, additional flour, melted butter, and chopped nuts in a separate bowl for the cinnamon streusel.
  8. Spoon half of the batter into the prepared pan, spreading it evenly.
  9. Sprinkle half of the streusel mixture over this layer.
  10. Top with the remaining batter, followed by the last of the streusel mixture.
  11. Bake for about 45–55 minutes or until a toothpick inserted into the center comes out clean.
  12. Cool the cake in the pan for about 15 minutes before transferring it to a wire rack.
  13. Whisk the powdered sugar with maple syrup and milk until smooth and drizzle it generously over the cooled cake.

Notes

For best results, ensure all ingredients are at room temperature before starting. Store in an airtight container at room temperature for up to three days.
