Description

Delicious S’mores Fudge Brownie Bars featuring a graham cracker crust, fudgy brownie core, and toasted mini marshmallows.


Ingredients

  • 2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar
  • 1 cup unsalted butter, melted
  • 1 ½ cups granulated sugar
  • 1 cup light brown sugar
  • 4 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon fine sea salt
  • 1 cup semi-sweet chocolate chips
  • 2 cups mini marshmallows
  • 1 cup milk chocolate, melted
  • ½ cup semi-sweet chocolate, melted

Instructions

  1. Preheat your baking oven to 175°C (350°F). Grease a 9×13-inch baking pan with parchment paper.
  2. Mix together the graham cracker crumbs, unsalted butter, and brown sugar until it resembles damp sand.
  3. Press the mixture firmly into the bottom of the prepared pan.
  4. Bake the crust for 8 minutes then cool slightly.
  5. Whisk together melted butter, granulated sugar, and brown sugar until smooth.
  6. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  7. Sift in flour, cocoa powder, and salt, and fold until combined.
  8. Fold in chocolate chips.
  9. Pour brownie batter over the crust and smooth the top.
  10. Bake for 30 to 35 minutes until a toothpick comes out with a few moist crumbs.
  11. Scatter mini marshmallows on top and return to the oven for 3 to 5 minutes.
  12. Drizzle melted milk and semi-sweet chocolate over the marshmallows.
  13. Cool completely, then refrigerate for 1 hour before cutting into squares.

Store in an airtight container at room temperature for up to 4 days or freeze for up to 2 months.
