Description

A hearty and satisfying dish that combines ground beef, black beans, and corn with taco seasoning, perfect for busy days.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 2 cups diced potatoes
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Combine the cooked beef, black beans, corn, diced tomatoes, taco seasoning, and diced potatoes in the slow cooker. Season with salt and pepper.
  3. Stir well to mix all ingredients.
  4. Cover and cook on low for 360-480 minutes or on high for 180-240 minutes.
  5. Sprinkle cheddar cheese on top 30 minutes before serving and cover until melted.
  6. Serve warm.

Notes

Can be served with cornbread or a green salad. Adding sour cream or guacamole can enhance the flavors.
