- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 2 cups diced potatoes
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Combine the cooked beef, black beans, corn, diced tomatoes, taco seasoning, and diced potatoes in the slow cooker. Season with salt and pepper.
- Stir well to mix all ingredients.
- Cover and cook on low for 360-480 minutes or on high for 180-240 minutes.
- Sprinkle cheddar cheese on top 30 minutes before serving and cover until melted.
- Serve warm.
Notes
Can be served with cornbread or a green salad. Adding sour cream or guacamole can enhance the flavors.
