Description

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tbsp brown sugar
  • 4 packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1/2 cup sour cream
  • 1 tbsp vanilla extract
  • 4 large eggs
  • 1 cup caramel sauce
  • 1 tsp flaky sea salt
  • 1/3 cup chopped pecans or toffee bits

Instructions

  1. Preheat your oven to 325°F. Grease a 9-inch springform pan and wrap the outside with foil.
  2. In a bowl, mix graham cracker crumbs, melted butter, and brown sugar until combined. Press firmly into the bottom of the pan. Bake the crust for 10 minutes, then let it cool slightly.
  3. In a large mixing bowl, beat the cream cheese until smooth and creamy. Add sugar and mix until fluffy. Blend in sour cream and vanilla extract.
  4. Add eggs one at a time, mixing on low speed just until combined. Pour the cheesecake filling over the crust and smooth the top.
  5. Place the cheesecake pan into a larger roasting pan and fill it with hot water halfway up the sides to create a water bath. Bake for 60–70 minutes, until the edges are set but the center still has a slight jiggle.
  6. Turn off the oven, crack the oven door slightly, and let the cheesecake cool slowly for 1 hour to prevent cracks. Chill the cheesecake for at least 6 hours or overnight for the creamiest texture.
  7. Pour thick caramel sauce over the top, letting it drip naturally down the sides. Sprinkle with flaky sea salt and chopped pecans or toffee bits for the perfect crunchy finish.
  8. Serve this salted caramel cheesecake chilled for the ultimate creamy, melt-in-your-mouth dessert experience.
