Description

A classic Clafoutis featuring sweet cherries in a delicate, flan-like custard, perfect for celebrating stone fruit season.


Ingredients

  • 2 cups sweet cherries (fresh or frozen)
  • 1 tbsp softened butter (for greasing the baking dish)
  • 3 large eggs, room temperature
  • ¾ cup granulated white sugar
  • 1 cup whole milk (or half-and-half)
  • ½ cup all-purpose flour, sifted
  • 2 tbsp unsalted butter, melted and cooled slightly
  • 1 tsp pure vanilla extract
  • ¼ tsp fine sea salt
  • 12 tbsp powdered sugar (for topping)

Instructions

  1. Preheat your oven to 180°C (350°F) with the baking rack positioned in the center.
  2. Coat the inside of your 20×20 cm glass baking dish with softened butter.
  3. Arrange your cherries in a single, even layer across the bottom of the prepared dish.
  4. Whisk the eggs and sugar together in a mixing bowl until pale yellow and smooth.
  5. Stream in milk, melted butter, vanilla extract, and salt, whisking continuously until integrated.
  6. Gradually add sifted flour to the mixture and whisk until smooth.
  7. Pour the batter over the arranged cherries carefully.
  8. Bake for 40 to 45 minutes until puffed and golden brown.
  9. Transfer the dish to a wire cooling rack and allow to cool slightly.
  10. Dust with powdered sugar before slicing into squares or wedges.

Notes

For added flavor, consider pitting the cherries or substituting a portion of the vanilla extract with almond extract. Clafoutis tastes great warm or chilled.
