A classic Clafoutis featuring sweet cherries in a delicate, flan-like custard, perfect for celebrating stone fruit season.

- 2 cups sweet cherries (fresh or frozen)
- 1 tbsp softened butter (for greasing the baking dish)
- 3 large eggs, room temperature
- ¾ cup granulated white sugar
- 1 cup whole milk (or half-and-half)
- ½ cup all-purpose flour, sifted
- 2 tbsp unsalted butter, melted and cooled slightly
- 1 tsp pure vanilla extract
- ¼ tsp fine sea salt
- 1–2 tbsp powdered sugar (for topping)
Instructions
- Preheat your oven to 180°C (350°F) with the baking rack positioned in the center.
- Coat the inside of your 20×20 cm glass baking dish with softened butter.
- Arrange your cherries in a single, even layer across the bottom of the prepared dish.
- Whisk the eggs and sugar together in a mixing bowl until pale yellow and smooth.
- Stream in milk, melted butter, vanilla extract, and salt, whisking continuously until integrated.
- Gradually add sifted flour to the mixture and whisk until smooth.
- Pour the batter over the arranged cherries carefully.
- Bake for 40 to 45 minutes until puffed and golden brown.
- Transfer the dish to a wire cooling rack and allow to cool slightly.
- Dust with powdered sugar before slicing into squares or wedges.
Notes
For added flavor, consider pitting the cherries or substituting a portion of the vanilla extract with almond extract. Clafoutis tastes great warm or chilled.
