- ½ cup unsalted butter, thoroughly softened
- ½ cup creamy commercial peanut butter
- ½ cup light brown sugar, firmly packed
- ¼ cup granulated white sugar
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour, spooned and leveled
- ½ teaspoon baking soda
- ¼ teaspoon fine sea salt
- ½ cup semi-sweet mini chocolate chips
- ¼ cup authentic Reese’s Peanut Butter Cups, coarsely chopped
Instructions
- Preheat your oven to 175°C (350°F). Line two large baking sheets with parchment paper.
- Combine the softened butter, creamy peanut butter, brown sugar, and granulated sugar in a large mixing bowl and beat until smooth and fluffy.
- Add the egg and vanilla extract and mix until well incorporated.
- Whisk together the flour, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the mini chocolate chips and chopped Reese’s Peanut Butter Cups carefully.
- Drop spoonfuls of dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 10 to 12 minutes, until the edges are golden brown but the centers remain soft.
- Remove from the oven and let cool on the baking sheet for 3 to 5 minutes before transferring to a wire rack.
Notes
For best results, use commercial creamy peanut butter and chill the Reese’s before chopping.
