Description

A dense, buttery graham cracker crust topped with an ultra-creamy peanut butter filling and rich semi-sweet chocolate ganache, crowned with chopped Reese’s Peanut Butter Cups.


Ingredients

  • ⅓ cup Unsalted Butter (Melted)
  • 2 tablespoons Sugar
  • 24 oz Full-Fat Cream Cheese (softened to room temperature)
  • 1 cup Creamy Peanut Butter
  • 1 cup Granulated Sugar
  • ½ cup Sour Cream
  • 1 teaspoon Vanilla Extract
  • 3 Large Eggs (room temperature)
  • 1 cup Semi-Sweet Chocolate Chips
  • ½ cup Heavy Cream
  • Chopped Reese’s Peanut Butter Cups (for topping)
  • Extra Peanut Butter (for drizzle)
  • Whipped Cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch springform pan.
  2. In a medium bowl, stir together the graham cracker crumbs, melted unsalted butter, and sugar until it resembles wet sand.
  3. Pour the crumbs into the springform pan and press it firmly into the base.
  4. Bake at 350°F for 10 minutes, then let it cool completely.
  5. In a large mixing bowl, beat the cream cheese and sugar until fluffy.
  6. Add the creamy peanut butter, sour cream, and vanilla extract, then beat until smooth.
  7. Mix in the eggs one at a time on low speed.
  8. Lower the oven temperature to 325°F (165°C).
  9. Wrap the springform pan in aluminum foil to prevent moisture from seeping in.
  10. Pour the peanut butter filling over the cooled crust.
  11. Place the pan inside a larger roasting pan filled with hot water.
  12. Bake for 60 to 70 minutes, until edges are set but center jiggles slightly.
  13. Let cool in the oven for 1 hour, then refrigerate for at least 6 hours.
  14. For the ganache, heat heavy cream and pour over chocolate chips, stir until smooth.
  15. Remove cheesecake from the springform, pour ganache over top.
  16. Garnish with whipped cream and Reese’s Peanut Butter Cups, then drizzle with melted peanut butter.
