- 1.5 cups Graham Cracker Crumbs
- ⅓ cup Unsalted Butter (Melted)
- 2 tablespoons Sugar
- 24 oz Full-Fat Cream Cheese (softened to room temperature)
- 1 cup Creamy Peanut Butter
- 1 cup Granulated Sugar
- ½ cup Sour Cream
- 1 teaspoon Vanilla Extract
- 3 Large Eggs (room temperature)
- 1 cup Semi-Sweet Chocolate Chips
- ½ cup Heavy Cream
- Chopped Reese’s Peanut Butter Cups (for topping)
- Extra Peanut Butter (for drizzle)
- Whipped Cream (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9-inch springform pan.
- In a medium bowl, stir together the graham cracker crumbs, melted unsalted butter, and sugar until it resembles wet sand.
- Pour the crumbs into the springform pan and press it firmly into the base.
- Bake at 350°F for 10 minutes, then let it cool completely.
- In a large mixing bowl, beat the cream cheese and sugar until fluffy.
- Add the creamy peanut butter, sour cream, and vanilla extract, then beat until smooth.
- Mix in the eggs one at a time on low speed.
- Lower the oven temperature to 325°F (165°C).
- Wrap the springform pan in aluminum foil to prevent moisture from seeping in.
- Pour the peanut butter filling over the cooled crust.
- Place the pan inside a larger roasting pan filled with hot water.
- Bake for 60 to 70 minutes, until edges are set but center jiggles slightly.
- Let cool in the oven for 1 hour, then refrigerate for at least 6 hours.
- For the ganache, heat heavy cream and pour over chocolate chips, stir until smooth.
- Remove cheesecake from the springform, pour ganache over top.
- Garnish with whipped cream and Reese’s Peanut Butter Cups, then drizzle with melted peanut butter.
