Ingredients

  • 400 grams fresh red currants
  • 200 grams sugar
  • 1 tablespoon lemon juice
  • 1 pinch salt

Instructions

  1. Wash the currants thoroughly under cold water, removing any stems and leaves.
  2. Measure 400 grams of red currants and combine them with 200 grams of sugar in a large bowl.
  3. Let the mixture sit for about 30 minutes to allow the currants to release their juices.
  4. Transfer the currant mixture to a saucepan and add the lemon juice and salt.
  5. Cook on medium heat, stirring occasionally until it comes to a gentle boil.
  6. Reduce heat and allow it to simmer for about 20 minutes until it thickens.
  7. Remove from heat and strain through a fine sieve to separate solids from liquid.
  8. Pour the sauce into sterilized jars and seal them while still hot.
