Raspberry White Chocolate Panna Cotta

Description

A delightful panna cotta that combines the sweetness of white chocolate with the tartness of raspberries.


Ingredients

  • 2 cups heavy cream (480ml)
  • 1 cup whole milk (240ml)
  • 7 oz white chocolate, finely chopped (200g)
  • 1/4 cup granulated sugar (50g)
  • 2 tsp vanilla extract
  • 2 1/4 tsp powdered gelatin (1 packet/7g)
  • 3 tbsp cold water
  • 1 1/2 cups fresh or frozen raspberries (180g)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water (optional)
  • 6 fresh raspberries for garnish
  • Dark chocolate shavings for garnish
  • Fresh mint leaves (optional for garnish)

Instructions

  1. Sprinkle the gelatin over the cold water and let it bloom for 5-10 minutes.
  2. Combine the heavy cream, milk, and sugar in a saucepan over medium-low heat. Stir until the sugar dissolves and it’s hot but not boiling.
  3. Remove from heat and add the white chocolate. Stir until completely melted and smooth.
  4. Stir in the vanilla extract, then whisk in the bloomed gelatin until fully dissolved.
  5. Divide the mixture evenly among six serving glasses.
  6. Refrigerate for at least 240-360 minutes, or until completely set.
  7. Cook the raspberries, sugar, and lemon juice in a small saucepan for 5-7 minutes until softened.
  8. If desired, stir in the cornstarch slurry and cook for another minute. Let the topping cool completely.
  9. Spoon the cooled raspberry topping over each chilled panna cotta.
  10. Finish with a fresh raspberry, dark chocolate shavings, and mint leaves if desired.
  11. Serve chilled for a smooth, creamy dessert.

Notes

Ensure gelatin is fully bloomed for a smooth consistency. Experiment with different fruits for variations.
